ok so in case anyone wants to hear some funny things well funny when it happened and as jessica calls it hooda funny(meaning i find it funny everyone else not so much) so I was talking to the chef earlier as I was cutting carrots on a mandolin. I turned to look at him for a second and nipped my nuckle onthe blade pealing off some skin. I jumped back thinking i cut myself bad, and the chef says to me in french, this container is for carrots only not fingers. The reason why I am saying this is because I realized somethign very interesting today. The chef is a very nice guy, but when its time for business he serious. He starts the same time as everyone else and doesnt go sit down and have a coffee and do paperwork, instead he gets changed and starts helping everyone out on their prep list so that we can all sit down for lunch at the same time. That is something I find admirable. This is the first chef Ive worked for that doesnt sit around and saying oh i have alot of paper work to do. He teaches simple techniques and if you ahve a question he encourages you to ask not just say yes chef, but understandthe reasoning behind the technique. I really hope to emulate this kind of attitude when i come back home. Everyone works together as a team, if one person is done their prep first they ask to help otehrs out, and they dont just go out for a smoke while others might be struggling. and if someone offers to give a hand no one thinks less of one another for that, unlike what I have previously experienced at other jobs. So I am not just learning about cooking here but learning about how to work as team and seeing how a team works. anyways I need to go take a nap before i go back to work.
