hello

Everything is going fine and its all good. Appearently the french dont eat pork anything less than well done of the chemical that is injected in the pig before they slaughter it. WHO KNEW? Well I didnt because I figured it should be medium the way I was tought...O How wrong I was. A customer sent it back saying it was underdone and then the chef told me why. Eh! know for the future.

but on another note, I always wanted to know a good recipe and method to make Pate En Croute, and voila now I have. Today one of my friends here was making it so he showed me and gave me the recipe to make it and the method.!!! yey cant wait to make it myself when I get back. I will hopefully try a piece tonight during dinner service.

Working is going well. I am getting the hang of it and I am able to speak french better and I am conversing better with the chef, as well as understanding the directions. Although these people speak very quickly and its tough some times to understand.

AH. So today in walks Chef Jean-Paul Lacombe (he owns the restaurant and has 2 michelin stars) and he starts talking to me in french after a few sentences I told him I dont speak french that well. So he's like oh yeah your the Canadian! You speak english? I told him yes. And he asked me if I was enjoying my time in Lyon and enjoying my job, and if there was anything I needed just ask. He asked how long my visa was for, and I answered a year. He then said he read my resume and liked it and hoped I stayed there for the whole time. So we'll see.

otherwise its just raining here so it's kinda blah!

I am trying something new though. There is something called couch surfing. Its basically people who let strangers stay on their couch for a few days while in the city. It's a good free way to meet new people. Well I already have a place, but the Couch surfing community her in Lyon is very big and they all get together for parties once a week (monday night), and post on forums for cooking parties etc. So I figured I would try it. Worse comes to worse I have drinks with wierdos and best scenario I meet nice people and make good friends.

  1. Hahaha what a fun day!! That is great about meeting the chef! Maybe he also knows people in other cities if/when you decide to move. Good luck with the weirdos tonight! I hope you are not one of the weirdest ones there! haha Just jokin!! I love and miss you!! Keep collecting those yummy recipes to try out on me!!!
